The Organic Chemistry Cookbook contains reactions commonly encountered in an introductory organic chemistry course. It is best used as an accompaniment to an organic chemistry text, for a working knowledge of nomenclature and fundamental reaction mechanics is assumed. Unique in design, The Organic Chemistry Cookbook presents core concepts within the framework of lab synthesis of organic compounds. Each reaction presented in The Organic Chemistry Cookbook gives an example of how to produce a specific organic compound, or dish. In typical cookbook format, each dish is presented with a list of ingredients (reactants) and method of preparation. The Ingredients and Synthesis Synopsis sections represent a general summary for making the desired product whether it be an alkane, alcohol, or B-ketoester, etc. The sections Reaction Mechanism and Explanation of Steps explore the results which follow Ingredients and Synthesis Synopsis. Unlike the typical illustration of a reaction mechanism presented in a textbook, double-sided arrows indicating a reversible step are not used; yet, reversible steps that merit examination may be addressed. Moreover, illustrations of a mechanism are hand drawn for a more organic appeal. All dishes close with a question and answer section entitled Ask the Chef. Ask the Chef provides further analysis of the reaction mechanism, addressing questions typically concerned with key steps of the mechanism as well as the consequences of variations to the list of ingredients.
Good health begins with what you put in your body. When you eat better, you feel better. It’s that simple. A few short years ago, Elizabeth Stein could be found in her tiny Manhattan kitchen searching for a way to make gluten-free and vegan products that tasted great and weren’t overly processed. Working with ingredients such as chia seeds, flax, hemp, and coconut sugar, Elizabeth successfully developed recipes that were all-natural, non-GMO, gluten-free, and diabetes friendly. These recipes helped her form Purely Elizabeth, an award-winning line of products that can be found in more than 1,500 stores. Eating Purely is a collection of Elizabeth’s favorite recipes, which she has made for family, clients, and friends over the years. The recipes are healthy, easy, and delicious—and at times even indulgent. Eating Purely is focused on cooking with whole foods that are naturally gluten-free, nutrient rich, free of refined sugar, and mostly vegetable based. These recipes are centered on Stein’s five Eating Purely Principles, which will leave you feeling healthy and purely radiant. These principles are: Eat Whole, Clean Foods Focus on Plants Add in Nutrient-Rich Ingredients Kick Inflammatory Foods to the Curb and Practice the 80/20 Rule. Eating Purely includes more than one hundred fun and approachable recipes, ranging from brunch and salads to vegetarian mains and seasonal menus to celebrate with family and friends. Throughout Eating Purely, Stein also shares personal stories on health, exercise, family, entertaining, and starting her own natural foods company. Interwoven throughout the book is what Stein calls “the purely scoop”—time-saving cooking tips, benefits of ingredients used, resources for buying foods, and food and wine pairings. Skyhorse Publishing, along with our Good Books and Arcade imprints, is proud to publish a broad range of cookbooks, including books on juicing, grilling, baking, frying, home brewing and winemaking, slow cookers, and cast iron cooking. Discover the ancient grain with tremendous flavor that is a true gift for many who suffer from gluten sensitivity or choose to eat gluten free. The only wheat in existence that has never been hybridized or modified, einkorn grew thousands of years ago in the Fertile Crescent. Carla Bartolucci came across it when searching for an alternative grain for her daughter Giulia, who was diagnosed with gluten sensitivity in 2008. Einkorn has remained unaltered for thousands of years, which allows many, including Giulia—who suffered from mood swings, asthma, and digestive problems—to eat wheat without symptoms. Amazed by her daughter’s health transformation, Carla became a champion of this little-known, nutrient-packed grain. Einkorn shares 100 delicious recipes for working with the grain and its flour in a wide variety of flavorful dishes, such as Yogurt Blueberry Muffins, Spinach Lasagna Bolognese, Neapolitan Pizza Margherita, and Soft & Chewy Ginger Cookies—as well as sourdough and yeasted breads like Classic French Boule and buttery Sweet Potato Rolls. This book also explores einkorn’s history, unique genetics, and superior nutrient content, while sharing Carla’s tips for using it to its full baking and cooking potential. With eighty-five beautiful color photographs, Einkorn will introduce home cooks to a delicious ancient grain that can transform the way they eat for the better by adding more nutrition and flavor to the foods they love.
