This book summarizes the results achieved so far by application of various biological systems (including genomics, transcriptomics, proteomics, and metabolomics) involved in the pathomechanisms and early diagnosis of periparturient diseases as specific biomarkers of disease in cattle. These emerging technologies help to extensively enhance our understanding of the etiology and pathogenesis of periparturient diseases of transition dairy cows. The book includes a chapter dedicated to ‘omics’ sciences and one that discusses the myths established in animal and veterinary sciences in recent decades and emerging, new paradigms. The diseases discussed include metritis, mastitis, laminitis, ketosis, rumen acidosis, periparturient immunosuppression, gastrointestinal microbiota and their involvement in disease, infertility, fatty liver, milk fever, and retained placenta. The aim of this book is to disseminate the most recent research in science and technology against microbial pathogens presented at the first edition of the ICAR Conference Series (ICAR2010) held in Valladolid, Spain, in November 2010. This volume of Advances in Nutritional Research focuses on colostrum and milk as agents of defense against infection both for the suckling offspring and for the lactating mammary gland. The scope of the volume includes positive and negative influences of the consumption of mother's milk on the risk of infec tion, immunobiological roles of individual milk components, activities of milk and its components in promoting development of neonatal immunocompetence, the potential of milk and its components as therapeutic agents and as functional foods that support immune competence, and external influences that determine the immunological activity of milk. The volume is intended to provide a critical assessment of the limits of available information pertaining to humans and animals, together with authoritative comment regarding newer directions and unproven ideas. Part I provides a foundation for the volume. Readers unfamiliar with immunology will find, in Chapter 1, a selective outline of the anatomy and ontogeny of the mammalian immune system and of the types and regulation of immune defenses in mammals. Some emphasis is given to the place of the mammary gland within the common mucosal defense system, and to important species peculiarities in this regard. Chapter 2 is an authoritative and forward looking perspective on the development of knowledge pertaining to the immuno biology of milk as a fluid with both anti-infectious and anti-inflammatory roles. Proceedings of the European Cooperation in the Field of Scientific and Technical Research (COST 825) Symposium on Mammary Gland Biology, held September 16-18, 1999, in Tours, France. It is difficult to overstate the evolutionary and functional significance of mammary tissue in biology. Substantial progress has been made by researchers in various disciplines, particularly over the last fifteen years, towards realizing the potential of this tissue to yield powerful experimental models for morphogenesis and tissue development; for cellular differentiation; for the biosynthesis and secretion of proteins, lipids, small molecules and inorganic salts; and for the coordination and regulation of these processes. More recently, the possibility of exploiting the secretory epithelial cells of mammary tissue as `cell factories' has become a reality and the recombinant production by lactating animals of an increasing number of proteins, valuable both in the pharmaceutical and `nutraceutical' fields, is in progress or under development. Also in this sphere of agricultural production, genetic as well as nutritional technologies are under investigation and exploitation to optimize milk composition for various end-uses - for instance in food process and manufacture. The possibilities of deriving health benefit from the bioactive properties of some of the minor constituents of milk are emerging to counter the highly-publicized negative health impact of excessive consumption of saturated animal fats. In human nutrition and medicine, the mammary gland is both a source of nutrition to the neonate and a potential health threat to the adult female - breast cancer remains the major single cause of female mortality in most developed countries. This volume provides a unique glimpse into our understanding, at the cutting edge of a variety of disciplines, of this versatile and extraordinary tissue, at the birth of the twenty-first century.
