There is unequivocal experimental, epidemiological, and clinical evidence demonstrating a correlation between diet and increased risk of cardiovascular disease (CVD). While nutritionally-poor diets can have a significant negative impact on cardiovascular health, dietary interventions with specific nutrients and/or functional foods are considered cost-effective and efficient components of prevention strategies. It has been estimated that nutritional factors may be responsible for approximately 40% of all CVD. Indeed, in one of the seminal studies conducted on modifiable risk factors and heart health (the INTERHEART study), >90% of all myocardial infarctions were attributed to preventable environmental factors with nutrition identified as one of the important determinants of CVD. There is an increasing public interest in and scientific investigation into establishing dietary approaches that can be undertaken for the prevention and treatment of CVD. The book describes how the balance between pro- and anti-inflammatory molecules is related to health and disease. It is suggested that many diseases are initiated and their progress is influenced by inflammatory molecules and a decrease in the production and/or action of anti-inflammatory molecules and this imbalance between pro- and anti-inflammatory molecules seems to have been initiated in the perinatal period. This implies that strategies to prevent and manage various adult diseases should start in the perinatal period. An alteration in the metaolism of essential fatty acids and their anti-inflammatory molecules such as lipoxins, resolvins, protecitns, maresins and nitrolipids seems to play a major role in the pathobiology of several adult diseases. Based on these concepts, novel therapeutic approaches in the management of insulin resistance, obesity, type 2 diabetes mellitus, metabolic syndrome, cancer, lupus, rheumatoid arthritis and other auto-immune diseases are presented. Metabolomics has been a useful method for various study fields. However, its application in animal science does not seem to be sufficient. Metabolomics will be useful for various studies in animal science: Animal genetics and breeding, animal physiology, animal nutrition, animal products (milk, meat, eggs, and their by-products) and their processing, livestock environment, animal biotechnology, animal behavior, and animal welfare. More application examples and protocols for animal science will promote more motivation to use metabolomics effectively in the study field. Therefore, in this Special Issue, we introduced some research and review articles for “Metabolomic Applications in Anmal Science”. The main methods used were mass spectrometry or nuclear magnetic resonance spectroscopy. Not only a non-targeted, but also a targeted, analysis of metabolites is shown. Over the past several years, extensive research has been done on the microbial production of polyunsaturated fatty acids (PUFA). Regardless, research on the oleaginous microalgae used as feedstock for biofuels production and the overall story about the production of nutraceutical fatty acids from oleaginous microalgae has been very limited. This volume provides an exclusive insight on the production of nutraceutical fatty acids from oleaginous microalgae and their role on human health. Some saturated and monounsaturated fatty acids can be synthesized by humans, whereas long-chain polyunsaturated fatty acids (PUFAs) such as α-linolenic acid and linoleic acid cannot and are deemed essential. The products of these acids, such as DHA, which is important for early visual and neurological development, are extremely important to human health. Replacing SFAs with omega-3 and omega-6 fatty acids in the diet reduce the risk of cardiovascular diseases and prevent Alzheimer's, bipolar disorder, and schizophrenia, among other benefits. The ever-rising global demand for omega-3 & 6 PUFAs, however, cannot be met solely by fish oil, due to diminishing fish stocks and pollution of marine ecosystems, which has led to increased interest in alternative sustainable sources. Vegetable oils from genetically engineered plant oilseeds and microorganisms are two potential alternatives to fish oil, even though omega-3 PUFAs are highest in the latter. Although transgenic plants present numerous advantages, their production is dependent on seasonal and climatic conditions and the availability of arable land. Moreover, there are public concerns regarding the cultivation of transgenic crops in open ecosystems. These, together with regulatory issues restrict the large-scale production of genetically modified crops. Microorganisms, however, are known natural producers of microbial oils similar to those obtained from plants and animals and a possible source of nutritionally important omega-3 & 6 PUFAs.
