Discovering Singaporean identity through cooking and cuisine While eating is a universal experience, for Singaporeans it carries strong national connotations. The popular Singaporean-English phrase "Die die must try" is not so much hyperbole as it is a reflection of the lengths that Singaporeans will go to find great dishes. In Eating Her Curries and Kway: A Cultural History of Food in Singapore, Nicole Tarulevicz argues that in a society that has undergone substantial change in a relatively short amount of time, food serves Singaporeans as a poignant connection to the past. Eating has provided a unifying practice for a diverse society, a metaphor for multiracialism and recognizable national symbols for a fledgling state. Covering the period from British settlement in 1819 to the present and focusing on the post–1965 postcolonial era, Tarulevicz tells the story of Singapore through the production and consumption of food. Analyzing a variety of sources that range from cookbooks to architectural and city plans, Tarulevicz offer a thematic history of this unusual country, which was colonized by the British and operated as a port within Malaya. Connecting food culture to the larger history of Singapore, she discusses various topics including domesticity and home economics, housing and architecture, advertising, and the regulation of food-related manners and public behavior such as hawking, littering, and chewing gum. Moving away from the predominantly political and economic focus of other histories of Singapore, Eating Her Curries and Kway provides an important alternative reading of Singaporean society.
Over the past two centuries, global commodity chains and industrial food processing systems have been built on an infrastructure of critical but often-overlooked facilities and technologies used to transport food and to convey knowledge about food. This culinary infrastructure comprises both material components (such as grain elevators, transportation networks, and marketplaces) and immaterial or embodied expressions of knowledge (cooking schools, restaurant guides, quality certifications, and health regulations). Although infrastructural failures can result in supply shortages and food contamination, the indirect consequences of infrastructure can be just as important in shaping the kinds of foods that are available to consumers and who will profit from the sale of those foods. This volume examines the historical development of a variety of infrastructural nodes and linkages, including refrigerated packing plants in Nazi-occupied Europe, trans-Atlantic restaurant labour markets, food safety technologies and discourses in Singapore, culinary programming in Canadian museums, and dietary studies in colonial Africa. By paying attention to control over facilities and technologies as well as the public–private balance over investment and regulation, the authors reveal global inequalities that arise from differential access to culinary infrastructure. This book considers what the transition into the Asian Century means for some of the most urgent issues in the world today, such as sustainable development, human rights, gender equality, and environmental change. The book critiques Anglo-Western centrism in tourism theory and calls on tourism scholars to make radical shifts toward more inclusive epistemology and praxis. From the British Century of the 1800s to the American Century of the 1900s to the contemporary Asian Century, tourism geographies are deeply entangled in broader shifts in geopolitical power. In the shadow of the COVID-19 pandemic, the significance of shifts in tourism geographies and the themes addressed in this volume are more urgent than ever. That the world faces increasing turmoil is abundantly clear. Yet, amidst the disruption to the everyday, it is hope and compassion, but also political-economic restructuring that is needed to reset the tourism industry in more sustainable, equitable, and ethical directions. With culinary nationalism defined as a process in flux, as opposed to the limited concept of national cuisine, the contributors of this book call for explicit critical comparisons of cases of culinary nationalism among Asian regions, with the intention of recognizing patterns of modern culinary development. As a result, the formation of modern cuisine is revealed to be a process that takes place around the world, in different forms and periods, and not exclusive to current Eurocentric models. Key themes include the historical legacies of imperialism/colonialism, nationalism, the Cold War, and global capitalism in Asian cuisines; internal culinary boundaries between genders, ethnicities, social classes, religious groups, and perceived traditions/modernities; and global contexts of Asian cuisines as both nationalist and internationalist enterprises, and "Asia" itself as a vibrant culinary imaginary. The book, which includes a foreword from Krishnendu Ray and an afterword from James L. Watson, sets out a fresh agenda for thinking about future food studies scholarship.
Accepting the challenge of rethinking connections of food, space and identity within everyday spaces of “public” eating in Malaysia and Singapore, the authors enter street stalls, hawker centers, markets, cafes, restaurants, “food streets,” and “ethnic” neighborhoods to offer a broader picture of the meaning of eating in public places. The book creates a strong sense of the ways different people live, eat, work, and relax together, and traces negotiations and accommodations in these dynamics. The motif of rojak (Malay, meaning “mixture”), together with Ien Ang’s evocative “together-in-difference,” enables the analysis to move beyond the immediacy of street eating with its moments of exchange and remembering. Ultimately, the book traces the political tensions of “different” people living together, and the search for home and identity in a world on the move. Each of the chapters designates a different space for exploring these cultures of “mixedness” and their contradictions—whether these involve “old” and “new” forms of sociality, struggles over meanings of place, or frissons of pleasure and risk in eating “differently.” Simply put, Eating Together is about understanding complex forms of multiculturalism in Malaysia and Singapore through the mind, tongue, nose, and eyes.
