From the Jewish Heartland: Two Centuries of Midwest Foodways reveals the distinctive flavor of Jewish foods in the Midwest and tracks regional culinary changes through time. Exploring Jewish culinary innovation in America's heartland from the 1800s to today, Ellen F. Steinberg and Jack H. Prost examine recipes from numerous midwestern sources, both kosher and nonkosher, including Jewish homemakers' handwritten manuscripts and notebooks, published journals and newspaper columns, and interviews with Jewish cooks, bakers, and delicatessen owners. With the influx of hundreds of thousands of Jews during the late nineteenth and early twentieth centuries came new recipes and foodways that transformed the culture of the region. Settling into the cities, towns, and farm communities of Ohio, Indiana, Wisconsin, Michigan, Illinois, Missouri, Iowa, and Minnesota, Jewish immigrants incorporated local fruits, vegetables, and other comestibles into traditional recipes. Such incomparable gustatory delights include Tzizel bagels and rye breads coated in midwestern cornmeal, baklava studded with locally grown cranberries, dark pumpernickel bread sprinkled with almonds and crunchy Iowa sunflower seeds, tangy ketchup concocted from wild sour grapes, Sephardic borekas (turnovers) made with sweet cherries from Michigan, rich Chicago cheesecakes, native huckleberry pie from St. Paul, and savory gefilte fish from Minnesota northern pike. Steinberg and Prost also consider the effect of improved preservation and transportation on rural and urban Jewish foodways, as reported in contemporary newspapers, magazines, and published accounts. They give special attention to the impact on these foodways of large-scale immigration, relocation, and Americanization processes during the nineteenth century and the efforts of social and culinary reformers to modify traditional Jewish food preparation and ingredients. Historians have long known that German immigrants provided much of the support for emancipation in southern Border States. Kristen Layne Anderson's Abolitionizing Missouri, however, is the first analysis of the reasons behind that opposition as well as the first exploration of the impact that the Civil War and emancipation had on German immigrants' ideas about race. Anderson focuses on the relationships between German immigrants and African Americans in St. Louis, Missouri, looking particularly at the ways in which German attitudes towards African Americans and the institution of slavery changed over time. Anderson suggests that although some German Americans deserved their reputation for racial egalitarianism, many others opposed slavery only when it served their own interests to do so. When slavery did not seem to affect their lives, they ignored it; once it began to threaten the stability of the country or their ability to get land, they opposed it. After slavery ended, most German immigrants accepted the American racial hierarchy enough to enjoy its benefits, and had little interest in helping tear it down, particularly when doing so angered their native-born white neighbors. Anderson's work counters prevailing interpretations in immigration and ethnic history, where until recently, scholars largely accepted that German immigrants were solidly antislavery. Instead, she uncovers a spectrum of Germans' "antislavery" positions and explores the array of individual motives driving such diverse responses.. In the end, Anderson demonstrates that Missouri Germans were more willing to undermine the racial hierarchy by questioning slavery than were most white Missourians, although after emancipation, many of them showed little interest in continuing to demolish the hierarchy that benefited them by fighting for black rights.

Positioned along the legendary Southwest Trail, the town of Washington in Hempstead County in southwest Arkansas was a thriving center of commerce, business, and county government in the nineteenth century. Historical figures such as Davy Crockett and Sam Houston passed through, and during the Civil War, when the Federal troops occupied Little Rock, the Hempstead County Courthouse in Washington served as the seat of state government. In 1857, Alla Lee, a 24yearold native of Ningbo, China, seeking a better life, came to St. Louis. A decade later, Lee was joined by several hundred of his countrymen from San Francisco and New York who were seeking jobs in mines and factories in and around St. Louis. Most of these Chinese workers lived in boardinghouses located near a street called Hop Alley. In time, Chinese hand laundries, merchandise stores, herb shops, restaurants, and clan association headquarters sprang up in and around that street, forming St. Louis Chinatown. Hop Alley survived with remarkable resilience and energy until 1966 when urban renewal bulldozers leveled the area to make a parking lot for Busch Stadium. A new suburban Chinese American community has been quietly, yet rapidly, emerging since the 1960s in the form of cultural community, where the Chinese churches, Chineselanguage schools, and community organizations serve as the infrastructure of the community.
