Global fruit and vegetable (F&V) production and consumption are significantly below the threshold needed to meet the FAO and World Health Organization (WHO) recommended F&V intake. In 2017, approximately 4 million premature deaths globally were attributable to insufficient F&V consumption. Globally, very few policy actions specifically promote F&V consumption beyond school-based interventions. Communication and behavior change interventions are insufficient on their own. International evidence suggests that fiscal policies, and policies and programmes that increase access to fresh F&Vs through mobile produce markets can be effective in increasing F&V consumption.
How we produce and consume food has a bigger impact on Americans' well-being than any other human activity. The food industry is the largest sector of our economy; food touches everything from our health to the environment, climate change, economic inequality, and the federal budget. From the earliest developments of agriculture, a major goal has been to attain sufficient foods that provide the energy and the nutrients needed for a healthy, active life. Over time, food production, processing, marketing, and consumption have evolved and become highly complex. The challenges of improving the food system in the 21st century will require systemic approaches that take full account of social, economic, ecological, and evolutionary factors. Policy or business interventions involving a segment of the food system often have consequences beyond the original issue the intervention was meant to address. A Framework for Assessing Effects of the Food System develops an analytical framework for assessing effects associated with the ways in which food is grown, processed, distributed, marketed, retailed, and consumed in the United States. The framework will allow users to recognize effects across the full food system, consider all domains and dimensions of effects, account for systems dynamics and complexities, and choose appropriate methods for analysis. This report provides example applications of the framework based on complex questions that are currently under debate: consumption of a healthy and safe diet, food security, animal welfare, and preserving the environment and its resources. A Framework for Assessing Effects of the Food System describes the U.S. food system and provides a brief history of its evolution into the current system. This report identifies some of the real and potential implications of the current system in terms of its health, environmental, and socioeconomic effects along with a sense for the complexities of the system, potential metrics, and some of the data needs that are required to assess the effects. The overview of the food system and the framework described in this report will be an essential resource for decision makers, researchers, and others to examine the possible impacts of alternative policies or agricultural or food processing practices.
This pilot experiment aims to address the knowledge gaps on the nutrition and health benefits of fruits and vegetables to help find ways to increase both consumption frequency and amounts at the house-hold level. While there are already commendable efforts in the country to improve overall nutrition knowledge through behavioral change communication, so far, the interventions focus on rural areas and are limited to conveying recommended behaviors with little or no emphasis on the mechanisms by which diet quality can improve nutrition and health outcomes. This experiment will be the first of its kind to introduce systematic nutrition behavioral change communication in urban Ethiopia with an enhanced intervention to communicate the mechanisms through which the consumption of fruits and vegetables can lead to better nutrition and health outcomes.

Topics covered include traditional breeding and modern processing techniques and their effect on fruit and vegetable phytochemicals; genetic manipulation of vegetable crops to alleviate diet-related diseases; agronomy and the nutritional quality of fruit; storage and handling of fruit and vegetables for optimal health-related quality and postharvest enhancement of bioactive compounds in fresh produce using abiotic stresses. The final chapters in Part five look at the nutritional quality of particular fruit and vegetable products, such as fresh-cut fruit and vegetables and organic fruit and vegetables. Improving the health-promoting properties of fruit and vegetable products is a valuable reference for those working in the fresh and processed fruit and vegetable sector of the food industry. Inadequate fruit and vegetable intake is a substantial contributor to the international burden of disease. Low fruit and vegetable intake is ranked among the leading dietary risk factors for mortality across low, middle, and high-income countries. But food decisions are complex. As a result, the reasons why people do not eat enough fruits and vegetables are complex. This paper, prepared as a contribution and input to the the FAO/WHO international workshop on fruits and vegetables 2020, reviews the challenges, opportunities and recommendations to develop effective policies and programmes promoting fruits and vegetables, from production to comsumption.
The U.S. Department of Agriculture administers food and nutrition assistance programs that promote fruit and vegetable consumption. But consumption remains relatively low among program recipients as well as among the general U.S. population. The perceived high cost of produce is often cited as a deterrent to more consumption. This study looks at coupons and price discounts, two methods of lowering the cost of fruits and vegetables, and uses household purchase data and a consumer demand model to examine each method. Coupons influence consumer behavior through a price-discount effect and an informational/advertising effect. Because of this dual effect, the use of a coupon to increase fruit and vegetable purchases may be more effective than a pure price-discount policy or other noncoupon promotion. Assuming a coupon usage rate of 10 to 50 percent, lowering prices through a "10 percent off" coupon would increase average weekly fruit and vegetable quantities purchased by 2 to 11 percent, as compared with a 5- to 6-percent effect for a pure price discount.
