Sweet Cherry Puff Pancake p. 34-35 Colorado sweet cherries are delicious with this pancake! 2 tablespoons butter 1/2 cup flour 1/3 cup sugar 1/2 cup milk 3 large eggs 1 can dark sweet pitted cherries, drained; reseve syrup 1 teaspoon cornstarch 1 tablespoon cherry-flavored liqueur Mint leaves and lemon curl, garnish Preheat oven to 425 degrees. Melt butter in 10-inch ovenproof skillet over medium-high heat. Meanwhile, in small bowl, whisk flour, sugar, milk, and eggs. Pour into skillet; cook one minute. Place in oven and bake ten minutes. In small saucepan over medium heat, combine reserved cherry syrup, cornstarch, and cherry liqueur; heat to boiling until liquid has thickened. Stir cherries into syrup mixture. Heat through.
