Abstract: This text explores the realities and fallacies associated with the role of nutrition in the aging process and the effects of age-associated diseases on nutrients. Each chapter attempts to demonstrate specifically the distinctions in nutrient requirements and metabolism in the old (age 70 and over) compared to the general population. This book provides knowledge of geriatiric nutrition for nutrition educators, dietitians, geriatricians, and gerontologists. Topics include: nutritional requireme nts and assessment of the elderly, the role of nutrition in the prevention of age-associated diseases, nutritional deficiencies in the elderly, systems malfunction in the elderly and nutrition, nutrition and behavior, and nutrition misinformation among the elderly (health fraud-creation of food fads for profit).
Food Authenticity and Traceability covers the most recent trends and important topics in food authentication, with an emphasis on the components of a food traceability systems. The book discusses techniques such as omics-based technologies, chromatographic methods, mass spectrometry, hyperspectral and chemical imaging, molecular and DNA-based techniques, chemometrics and data mining algorithms, high-throughput sequencing, and non-targeted fingerprinting approaches and proteomics. - Includes information on blockchain for food traceability analysis - Discusses consumer preferences and perceptions regarding food traceability drivers and food fraud - Presents approaches of authentication for food of animal origin and omics-based technologies

This book summarizes the latest meeting of the world's leading researchers in sports nutrition, held at the IOC headquarters in Lausanne, Switzerland. The aim of the conference was to review the latest developments in the world of sport nutrition, to follow up on developments since the previous 1991 conference, and to draw up guidelines to help athletes and coaches optimise their performance by using nutrition to support training and maximise performance in competition. Subjects discussed in this cutting-edge collection include: * energy balance and body composition * the role of carbohydrates * the role of proteins and amino acids * athlete fluid and electrolyte requirements * the use of dietary supplements for optimum performance and immune function.
This volume includes contributions presented at the Second International Sym posium on Nutrition and Cancer, held in Naples, Italy, in October 1998 at the National Tumor Institute "Fondazione Pascale." During the Conference, experts from different disciplines discussed pivotal and timely subjects on the interactions between human nutrition and the development of malignancies. Comparing the themes of this Meeting with those discussed at the First Sympo sium in 1992, the major scientific advancements certainly derive from the extensive use of molecular approaches to perform research in nutrition. Moreover, the fundamental observation of R. Doll and R. Peto (1981), which suggested that at least 35% of all cancers (with large differences among different tumors) might be prevented by dietary regimens, has been definitively confirmed by epidemiological studies. On the other hand, the relationships between diet and cancer are quite intricate and complex; it is difficult, and at the same time not methodologically correct, to reduce them to simple terms. Metabolic and hormonal factors, contaminants and biological agents, and deficiency of specific protective nutrients are all pieces of the same puzzle.

This volume contains a selection of papers presented at the Nutrition and Fitness Conference in Shanghai, held in November 2006 under the auspices of the World Council on Nutrition, Fitness and Health. Starting with a keynote presentation on nutrition, fitness and the concept of positive health from ancient times to the present, the focus then shifts to the role of omega-3 and omega-6 fatty acids in health and disease. Other topics addressed are non-conventional genetic risk factors for cardiovascular disease; the impact of the APO E genotype on health, nutrition and fitness; nutrition in the prevention of chronic disease; and the connection between exercise and obesity. Papers on nutritional risk factors for gastrointestinal cancers; mediterranean diets as a global resource in health and disease; as well as political issues conclude the presentations. Covering a wide spectrum of issues, these proceedings will be of interest to geneticists, nutritionists and dieticians, exercise physiologists, cultural anthropologists, historians, pediatricians, internists, general practitioners, health care providers, scientists in industry and government, policymakers, and national and international governmental organizations.
