This book explores one of the most discussed and investigated novel foods in recent years: edible insects. The increasing demand for alternative protein sources worldwide had led the Food and Agriculture Organization of the United Nations (FAO) to promote the potential of using insects both for feed and food, establishing a program called “Edible Insects.” Although several social, environmental, and nutritional benefits of the use of insects in the human diet have been identified, the majority of the population in Western countries rejects the idea of adopting insects as food, predominantly for cultural reasons. Nevertheless, international interest in promoting the consumption of insects has grown significantly, mainly in North America and Europe. This trend is mostly due to increasing attention and involvement from the scientific network and the food and feed industries, as well as governments and their constituents. The book explores the current state of entomophagy and identifies knowledge gaps to inform primary research institutions, students, members of the private sector, and policymakers to better plan, develop, and implement future research studies on edible insects as a sustainable source of food. The case studies and issues presented in this book cover highly up-to-date topics such as aspects of safety and allergies for human consumption, final meat quality of animals fed with insects, the legislative framework for the commercialization of this novel food, and other relevant issues.

Behavior is the means through which animals interact with the environment and with each other. As such, behavior must be central to conservation efforts. In no example is this more clear than with the large blue butterfly (Phengaris arion) in the United Kingdom: failure to understand its life history and species interactions led to its local extinction, even with habitat restoration efforts. Despite the clear importance of behavior, conservation behavior is often under-discussed even in situations where the natural history of a species is well understood. We propose exploring conservation behavior within insects, and doing so with a wide diversity of species and geographic locations. As insects have often served as models to advance theory, so they may serve as models to advance conservation. Our goals for this collection are three-fold. First, we aim to present the latest in insect behavior research, and how such research can be applied to conservation. Second, we will promote diverse authors from diverse geographic locations. Third, we will facilitate an educational/mentoring experience for early career professionals by enlisting senior professionals to work with their students and/or post-docs on the publication process from manuscript submission, to review, to publication.
The current eBook collection includes substantial scientific work in describing how insect species are responding to abiotic factors and recent climatic trends on the basis of insect physiology and population dynamics. The contributions can be broadly split into four chapters: the first chapter focuses on the function of environmental and mostly temperature driven models, to identify the seasonal emergence and population dynamics of insects, including some important pests. The second chapter provides additional examples on how such models can be used to simulate the effect of climate change on insect phenology and population dynamics. The third chapter focuses on describing the effects of nutrition, gene expression and phototaxis in relation to insect demography, growth and development, whilst the fourth chapter provides a short description on the functioning of circadian systems as well as on the evolutionary dynamics of circadian clocks.
