This volume explores the experience of hunger and food insecurity among college students at a large, public university in north Texas. Ninety-two clients of the campus food pantry volunteered to share their experiences through qualitative interviews, allowing the author to develop seven profiles of food insecurity, while at once exploring the impact of childhood food insecurity and various coping strategies. Students highlighted the issues of stigma and shame; the unwillingness to discuss food insecurity with their peers; the physical consequences of hunger and poor nutrition; the associations between mental health and nutrition; the academic sacrifices and motivations to finish their degree in the light of food insecurity; and the potential for raising awareness on campus through university engagement. Henry concludes the book with a discussion of solutions—existing solutions to alleviate food insecurity, student-led suggestions for additional resources, solutions in place at other universities that serve as potential models for similar campuses—and efforts to change federal policy.

BACKGROUND: The purpose of this study was to gain a better understanding of what food insecurity among college students. Qualitative research regarding food insecurity on college campuses has been growing as we gain a better understanding of how prevalent this issue is and its broad impact on students. However, to our knowledge there are only a handful of studies that examined the student and university staff experience using mixed methods. Qualitative data is needed to gain a deeper understanding of the student experience. OBJECTIVE: To gain deeper insights about students' food insecurity experiences from students themselves and the university staff members who work with them. This insight is necessary to shift university's current policies and approach to helping students experiencing food insecurity and removing the stigma of the "starving student" experience. METHODS: Surveys and interviews were used to collect data from students to gain an understanding of their current living situations and understand their personal experiences accessing food. University staff completed surveys focused on understanding staff's experiences with student food insecurity as well as their attitudes and beliefs about students who experience hunger. RESULTS: The current study found that the financial burden of attending college along with student's food literacy level can contribute to student's food insecurity. Students identified barriers to food access, discussed their perceptions of their food experience, and also discussed who they lean on for support when struggling with food. Student's previous life experiences, food literacy, and social support systems all impact the student food experience. University staff identified similar barriers that they perceive students experience when struggling with hunger and also indicated that they have received little to no training or instruction on how to support students experiencing food insecurity. CONCLUSION: These findings can be used as a building block for developing interventions and the implementation of new resources to help minimize food insecurity on college campuses.

This book explores the experiences, causes, and consequences of food insecurity in different geographical regions and historical eras. It highlights collective and political actions aimed at food sovereignty as solutions to mitigate suffering. Despite global efforts to end hunger, it persists and has even increased in some regions. This book provides interdisciplinary and historical perspectives on the manifestations of food insecurity, with case studies illustrating how people coped with violations of their rights during the war-time deprivation in France; the neoliberal incursions on food supply in Turkey, Greece, and Nicaragua; as well as the consequences of radioactive contamination of farmland in Japan. This edited collection adopts an analytical approach to understanding food insecurity by examining how the historical and political situations in different countries have resulted in an unfolding dialectic of food insecurity and resistance, with the most marginalized people—immigrants, those in refugee camps, poor peasants, and so forth—consistently suffering the worst effects, yet still maintaining agency to fight back. The book tackles food insecurity on a local as well as a global scale and will thus be useful for a broad range of audiences, including students, scholars, and the general public interested in studying food crises, globalization, and current global issues.
As higher education continues to see a changing student population, there is clear evidence that food insecurity is a real concern on college campuses. The need to increase food availability and access on campuses is even more critical to the retention and education experiences of students. This study sought to understand the scope of food insecurity at one four-year public institution and whether there were implications on academic outcomes for college students who face it. Given the noteworthy changes in student demographics, it was important to determine whether nontraditional students are subject to an increased vulnerability to food insecurity, making college attendance and academic success more difficult. Data collection consisted of using a multi-method approach by administrating a survey questionnaire and conducting semi-structured interviews. An online survey was distributed to a random sample of 2,700 undergraduate students. In total, 314 students participated in the survey. Eight students participated in interviews about their experience with food insecurity. Overall, 47.9% of survey respondents scored in the category of being food insecure at some point within the past 12 months. Nontraditional college students are more likely to experience food insecurity at higher rates compared to other student populations. Students who experienced food insecurity had lower overall GPAs, were twice as likely to fail and withdraw from a course and four times more likely to take an incomplete grade in a course. The results of these tests indicated nontraditional food insecure students experienced academic outcomes differently compared to traditional food insecure students. The impact of food insecurity on GPA was marginally different between traditional and nontraditional students. Moreover, nontraditional food insecure students were 1.5 times more likely to fail, take an incomplete and withdraw from a course compared to food insecure traditional students. This study also examined the lived experiences of students who encountered food insecurity. Nine broad themes emerged from the analysis of interviews. These themes included coping strategies, physical and mental strain, compounded financial challenges, stigma, campus support, commitment toward degree completion, adverse academic implications, high food costs and the feeling of isolation or lack of socializing. An important recommendation drawn from these findings is for higher education institutions to consider establishing a variety of food relief initiatives that address the issue of student hunger and challenges policies preventing students from getting the support they need.

College is far too expensive for many people today, and the confusing mix of federal, state, institutional, and private financial aid leaves countless students without the resources they need to pay for it. In Paying the Price, education scholar Sara Goldrick-Rab reveals the devastating effect of these shortfalls. Goldrick-Rab examines a study of 3,000 students who used the support of federal aid and Pell Grants to enroll in public colleges and universities in Wisconsin in 2008. Half the students in the study left college without a degree, while less than 20 percent finished within five years. The cause of their problems, time and again, was lack of money. Unable to afford tuition, books, and living expenses, they worked too many hours at outside jobs, dropped classes, took time off to save money, and even went without adequate food or housing. Goldrick-Rab combines that data with devastating stories of six individual students, whose struggles make clear the human and financial costs of our convoluted financial aid policies. The purpose of this research is to explore the lived experiences of college student food insecurity, the role of food policies and programs aimed at addressing food security and how the social construction of target populations can be used to explain the understanding of college students and the policy context of food insecurity. It focuses on students at the University of Nebraska Omaha, University of Nebraska Lincoln, and the University of Nebraska Kearney. It examines the research questions: 1) How do students experience food insecurity? 2) What are the experiences and challenges students face when it comes to being food insecure? 3) What barriers do students face in addressing food insecurity? 4) How can the social construction of target populations theory be used to explain our understanding of college students and the policy context of food insecurity? 5) In their current form, how do policies affect food insecurity, and what do they mean for students and institutions? 6) What are potential policy changes and solutions to address food insecurity among college and university students? A phenomenological approach was used. Findings suggest that college students who are food insecure have vast and multifaceted experiences. They share experiences around many aspects related to their lives as college students, their academic and social lives, their well-being, issues of uncertainty and sacrifices, and feelings of vulnerability. They feel a loss of identity and widespread feelings of a lack of understanding of their experiences. Students utilize a verity of means to address their needs, including some unorthodox measures to address food insecurity. The social construction of target populations is useful explaining the relationship between policy design and the impact on college students and the food insecurity they experience. These changes are critical to ensuring students have a safe academic experience. This research identifies the dynamics of food insecurity among college students and the importance of the need for re-framing of public policy to address students' needs.
The Impact of Food Insecurity on First-Generation Female Higher Education Students seeks to emphasize the importance of mattering, belonging and effective student resources in the lives of first-generation women college students. They face unique obstacles that if not adequately addressed could impact their retention and persistence. Success in higher education relies on access to resources, connection, and a sense of meaning and purpose. Based on a yearlong qualitative study the book highlights the ways in which access to student resources, mattering and marginalization frame larger issues including mental health and food and housing insecurities. Interviewing both students and staff provides a window into Riverside's campus climate and solidifies the importance of positive interactions. First-generation women striving to matter explain a need for faculty that understand their strengths, staff that encourage them to ask for assistance, and peers that invite them to join the conversation.
The United States is viewed by the world as a country with plenty of food, yet not all households in America are food secure, meaning access at all times to enough food for an active, healthy life. A proportion of the population experiences food insecurity at some time in a given year because of food deprivation and lack of access to food due to economic resource constraints. Still, food insecurity in the United States is not of the same intensity as in some developing countries. Since 1995 the U.S. Department of Agriculture (USDA) has annually published statistics on the extent of food insecurity and food insecurity with hunger in U.S. households. These estimates are based on a survey measure developed by the U.S. Food Security Measurement Project, an ongoing collaboration among federal agencies, academic researchers, and private organizations. USDA requested the Committee on National Statistics of the National Academies to convene a panel of experts to undertake a two-year study in two phases to review at this 10-year mark the concepts and methodology for measuring food insecurity and hunger and the uses of the measure. In Phase 2 of the study the panel was to consider in more depth the issues raised in Phase 1 relating to the concepts and methods used to measure food security and make recommendations as appropriate. The Committee on National Statistics appointed a panel of 10 experts to examine the above issues. In order to provide timely guidance to USDA, the panel issued an interim Phase 1 report, Measuring Food Insecurity and Hunger: Phase 1 Report. That report presented the panel's preliminary assessments of the food security concepts and definitions; the appropriateness of identifying hunger as a severe range of food insecurity in such a survey-based measurement method; questions for measuring these concepts; and the appropriateness of a household survey for regularly monitoring food security in the U.S. population. It provided interim guidance for the continued production of the food security estimates. This final report primarily focuses on the Phase 2 charge. The major findings and conclusions based on the panel's review and deliberations are summarized.
