Originally published in 1974, this volume examines the behavioural similarities of obese humans and animals whose so-called feeding centre (the ventro-medial hypothalamic nuclei) has been lesioned. Both the obese human and the VMH-lesioned animal seem to share a hyposensitivity to the internal (physiological) cues to eating and hypersensitivity to external cues associated with food. Beginning with a review, these obese animals and the human obese are compared point by point on experimental results reported in the literature. Then, new findings are presented that specifically tested humans for relationships that are well-established for lesioned animals. Next, a theoretical framework integrates the human and animal data to postulate that the relationship of cue prominence and probability of response is stronger for the obese than for normal. The causes for this, and the extension of the basis for the obese’s eating behaviour to other areas, are discussed in light of further experiments that will make this invaluable reading for all concerned with the history of obesity and the issues of regulatory behaviour.
After the appearance of the four-book series Human Nutrition: A Compre hensive Treatise, it became apparent to the editors that an important area of nutrition had been overlooked, namely, behavioral aspects of nutrition. There are two areas in which nutrition and behavior interact. On the one hand, mal nutrition may play a major role in determining behavior; alternatively, often aspects of behavior influence the eating habits of populations and individuals and thus affect their nutritional status. Restrained eaters tend to report an increase in their eating behavior in the presence of stress, whereas unrestrained eaters do not. Although this behavior has often been studied in one-time laboratory experiments, little research has been conducted in naturalistic settings. Our study examined the relationship between stress, eating and hunger among restrained and unrestrained eaters using daily assessment. We also examined the effects of interpersonal and noninterpersonal stress on eating, and negative affect as a mediator of the effects of stress on eating. 108 undergraduate participants completed initial measures to determine their trait-level restraint, and daily measures via website to assess their stress, restraint, eating and hunger. We found that as average daily stress increased, average daily restraint and average daily eating also increased. However, trait-level restraint did not predict these relationships. We also found a positive relationship between stress and hunger for men low in restraint.
