Recipes and Reciprocity considers the ways that food and research intersect for both researchers, participants, and communities demonstrating how everyday acts around food preparation, consumption, and sharing can enable unexpected approaches to reciprocal research and fuel relationships across cultures, generations, spaces, and places. Drawing from research contexts within Canada, Cuba, India, Malawi, Nepal, Paraguay, and Japan, contributors use the sharing of food knowledge and food processes (such as drying, steaming, mixing, grinding, and churning) to examine topics like identity, community-based research ethics, food sovereignty, and nutrition. Each chapter highlights practical and experiential elements of fieldwork, incorporating storytelling, recipes, and methodological practices to offer insight into how food facilitates relationship-building and knowledge-sharing across geographical and cultural boarders. Contributors to this volume bring a range of disciplinary backgrounds—including anthropology, public health, social work, history, and rural studies—to the exploration of global and Indigenous foodways, perceptions around ethical eating and authenticity, language and food preparation, perspectives on healthy eating, and what it means to develop research relationships through food. Joseph Eagle Elk (1931?91) was an effective and highly respected traditional Lakota healer. He practiced for nearly thirty years, treating serious physical and mental illnesses among the people of the Rosebud Reservation and elsewhere. In 1990 he began collaborating on his memoir with Gerald Mohatt, a close friend and cross-cultural psychologist. Eagle Elk?s story of his life, practice, and beliefs provides a uniquely introspective, demystified, and informative look at the career of a traditional Native American healer. We learn how a persistent vision and recurring visits by thunder spirits led Eagle Elk long ago to become a healer. On a more general level, we gain valuable insights into how Lakota healers practice today. Eagle Elk?s story and teachings also demonstrate the importance of community support and consensus in the development of traditional healers. Gerald Mohatt?s perspective as a cross-cultural psychologist enables him to highlight the psychological dimensions and efficacy of Eagle Elk?s healings and place them within a cross-cultural context. Eagle Elk?s life and career are presented in a way that brings together formative episodes from his life, selected teachings that emerged from those experiences, and case studies in healing. This arrangement allows readers to grasp the close relationship between the personal and cultural dimensions of traditional healing and to understand how and why this practice continues to affect and help others.
In the United States, some populations suffer from far greater disparities in health than others. Those disparities are caused not only by fundamental differences in health status across segments of the population, but also because of inequities in factors that impact health status, so-called determinants of health. Only part of an individual's health status depends on his or her behavior and choice; community-wide problems like poverty, unemployment, poor education, inadequate housing, poor public transportation, interpersonal violence, and decaying neighborhoods also contribute to health inequities, as well as the historic and ongoing interplay of structures, policies, and norms that shape lives. When these factors are not optimal in a community, it does not mean they are intractable: such inequities can be mitigated by social policies that can shape health in powerful ways. Communities in Action: Pathways to Health Equity seeks to delineate the causes of and the solutions to health inequities in the United States. This report focuses on what communities can do to promote health equity, what actions are needed by the many and varied stakeholders that are part of communities or support them, as well as the root causes and structural barriers that need to be overcome.
This book presents a fascinating exploration of eating experiences within US national parks, explaining how, on what, and why people eat in national parks and how this has changed over the last century. National parks are enjoying unprecedented popularity, and they are especially popular sites for the expression of cosmopolitanism, an ideological outlook descended from the Romantics on whose vision the parks were originally founded. The book explores the constructed foodscape within US national parks, situating the romantic consumption ethos within the context of sociological work on distinction, culinary tourism, and culinary capital. It analyzes and problematizes elements of cosmopolitan taste and desire, examining food tourism in wilderness spaces that satisfies cosmopolitan hunger for authenticity and a certain type of self-making. Weaving together strands of research that have not been previously integrated, the book gleans meaning from concessions menus and park restaurant web pages and employs audience analysis to take stock of park restaurant visitors’ contributions to restaurant review websites, as well as to understand how they represent their park eating experiences on social media. The book examines how satisfying cosmopolitan tastes in the parks creates profit for corporate concessioners, but also may produce bioregionalist successes and a recentering of Indigenous foodways. It concludes by exploring inroads to a better food experience in the parks, involving food products and processes that are regionally/locally specific, where tourists witness and participate in food production and enjoy commensality, but that are also non-extractive and show care for the environment and the people who inhabit it. Indigenous Food Systems addresses the disproportionate levels of food-related health disparities among First Nations, Métis, and Inuit people in Canada, seeking solutions to food insecurity and promoting well-being for current and future generations of Indigenous people. This book describes many of the unique contributions of the Food & Fitness program including a number of early successes, drawing lessons from efforts to form and maintain partnerships, and from the strategies employed to create structural change in communities. This important study introduces the Food and Fitness community partnerships and their work to increase access to healthy, locally grown food, and opportunities for physical activity, in vulnerable communities across the United States. Established in 2007 and funded by the WK Kellogg Foundation, the partnerships are increasing the capacity of communities to participate in policy and systems change to positively affect their health and well-being. The material covered in the chapters provide an illustration of how funders, grantees, and partners can work together to create sustainable change at the neighborhood level to ensure that all children and families are able to thrive. A range of studies ae looked at from the various initiatives funded nationwide to evaluation methods and results, and an explanation of the role of philanthropy in community development from the viewpoint of the funders.
